For the coulis, just heat all the ingredients in a saucepan for 30 minutes over low heat.
Then pass the mixture through a Chinese to keep only the juice and keep cool in a sauce dispenser or just a box.
At the last moment put the coulis on the panna cotta and enjoy with a small mint leaf if you have some under your elbow.
