Potato, carrot, light lentil and vegetable soybean stew
The potato stew recipe is typical of the comfort foods that I love to prepare all year round.
A very simple recipe that I’m sure will appeal to young and old alike.
Simmered
500 g potatoes
3 carrots
3 smoked tofu – smoked soy sausages
80 g blonde lenses
1 onion
5 g fresh turmeric
vegetables soup
Vegetables soup
1 leek
2 carrots
1 turnip
1 potato
2 celery stalks
1 onion
1 clove garlic
4 Cloves
1 sprig of thyme
2 bay leaves
Broth

Wash and peel all the vegetables

Plant the cloves in the onion.

Then put all the vegetables in a large pot (or Dutch oven) before covering with water.

Add the herbs and bring to a boil.

Leave on a low heat for 1 hour (at a low broth)

Pass through Chinese and the broth is ready.
For the stew

Peel and finely chop the onion

Wash, peel, cut the carrots and the potatoes and the soybeans.

Use gloves to peel the turmeric and grate it over the pot (or Dutch oven).

Brown the onion with the fresh turmeric and a little oil

Add the potatoes and carrots.

Mix then let return a few moments before covering with the vegetable broth.

Simmer for at least 1 hour at a low broth. You can also increase the heat for faster cooking, but the tastes and flavors will not be the same.

Add the lentils when there is 20 minutes left of cooking.

Serve with fresh parsley and bread for the sauce.

Note:
- Instead of the homemade vegetable broth, you can use a powdered broth but the tastes are bound to be less pronounced.
- For the “vegetable sausages” I use smoked tofu from the taifun brand. There is also the soy brand which offers very good smoked soy soyciss.
The “seitan sausage” is not the same taste I think.
